Flat bread with sourdough starter and coconut milk

Another day with playing dough in the kitchen. I love to play dough in the kitchen. It relieves my mind and let my creativity playing around with the available ingredients in my kitchen.

Because I do not have oven here, I could only do something on my electric stove with pan and pot. I planned to make flat bread with whole wheat flour / Atta in India. The flour is a bit rough than all purpose flour / Maida in India.

Here I do another experiment with Indian flour and my sourdough starter that is almost 3 months old.






Ingredients that we need are

5 tbsp starter (out from fridge)
2 tbsp whole wheat flour
2-3 tbsp water

Let the starter overnight on your kitchen counter. It will be active and work out in the night. Remember to leave the lid loosely or just cover it with kitchen towel.

The next morning, the starter will be hungry. Please feed again with 2 tbsp whole wheat flour and 2-3 tbsp water. The dough will be double in volume in one hour. It is the time to use it.

The other ingredients:
1 cup whole wheat flour
3 tbsp coconut milk (you may use milk)
50 gr grated carrots
1/2 tbsp salt

The Method is as below

1.Mix the starter with the other ingredients in a mixing bowl. Mix them well until form a dough.

2. Let it autolyse / rest for 15 minutes

3. Add the grated carrot into it. It will be a bit wet because of the juice of carrot. Add 1-2 tbsp flour. Knead the dough for 8 minutes. Let it ferment for 1 hour.

4. The dough will be double in volume. On the kitchen counter, sprinkle some flours. Transfer the dough to your counter, easily roll the dough and divide it into 6-7 portions.

5. Roll the dough into round shape and around 1/2 cm thickness. Smear little oil on top of the dough. Leave it aside and continue with the other dough.

6. Heat the non-stick pan. Place the dough with the oil side facing the pan. Cook it for 1-2 minutes. Smear little oil on the other side of the dough that facing us. Then, flip the dough and cook for another minutes.

7. Transfer the cooked flat bread on the plate. Cook the same way for another dough.

8. Enjoy the flat bread with any curry or salad or just enjoy it plain.
