Pita Bread on the pan

I try to make pita bread using the sourdough starter and a pan on my electric stove. It turned out good and showed its puff.






Ingredients:
100 gr sourdough starter is fed
150 gr all purpose flour
50 ml water
1/4 tsp salt

Method:
1. Feed your sourdough starter with water and flour if it comes out from the fridge. Let it grow double first. You may do it the day before or in the morning. It takes around 3-4 hours.

2. After it is doubled in volume, you may take 100 gr from it and mix it with all purpose flour and salt. Add the water slowly while mixing it, It could be that we do not need much water (it depends on your starter hydration). We just need to make soft dough.

3. After you form a dough, knead it for 5 minutes. Then let it rest for 3 hours, so it will double in volume and the starter works on the dough out.

4. Dust your counter top. Remove out the dough. Portion the dough into 5 to 6 pieces. Let it rest for 5 minutes.

5. On your dusted counter, flaten the dough into 1/2 cm thickness.

6. Heat your pan with high heat. Bake it for 2 minutes each side until it is puff. You may add some oil if you like too. Mine is without oil baked. Have a look on the pita bread, it could be easily burned when the heat is too high, we have to control the heat as well.

7. Serve it with some warm curry or I have it as breakfast with omelet and bowl of cucumber yogurt.
