Vanilla custard ice cream without ice cream machine

When I craved for some homemade ice cream, I made my own homemade ice cream eventhough it doesn't taste as smooth as the purchased ice cream. At least, it give



Ingredients:

250 ml heavy cream
250 ml milk-full fat
125 gr sugar
3 egg yolks
75 gr corn starch
5 ml vanilla extract / half pod of vanilla bean


Method:
1. In a heavy bottom pot, heat the milk, 1 tsp sugar and vanilla essence/bean. Heat it until bubbly, not overheat it.


2. In a separate bowl, beat egg yolks, sugar and corn starch until it is homogenized.

3. Add half of the warm milk into egg mixture. Whisk it well.

4. Pour the egg mixture into the rest of the milk mixture  in the pot.

5. Heat the custard mixture with low heat until it is thickened for 2-4 minutes. 

6. Switch off the heat. Strain the custard mixture into a gresh bowl .

7. Cover the custard with wrapping folio and chill it for 2-4 hours. In between 2 hours, whisk the custard to let it cool evenly. 


8. After four hours, place the custard in the fridge. Cool it down overnight, in between, whisk the custard for 2-3 times if it is possible to break the little part of the ice. 

9. Fridge it overnight. 

10. The next day serve it as your wish such as on top of chocolate cake. 




  1. The next day, the custard ice cream is ready to serve. It will not be as creamy as the one making with ice cream machine because by using ice cream machine, it breaks the crystal ice.
  2. Notes. if you do have blender at home, after the custard cream is half freezed, you may blend it in the blender to break the crystal ice. Place it back to freezer and freeze it overnight.
